Snowy day, Green Chile Stew
We still have lots of snow on the ground and a cold wind blowing through Placitas. This would be a good day for green chile stew!
My favorite way to make Green Chile Stew: brown 1 pound ground turkey in a large, heavy saucepan. add 2 or 3 cloves of finely diced garlic and continue browning until the garlic is soft. Add 2 or 3 large potatoes, peeled and diced in large chunks. Add enough water to cover potatoes (just barely). Cover and cook until the potatoes are cooked, but not mushy. Add one pound of frozen chopped green chile and simmer until the kitchen smells great and you're really hungry! Salt to taste and add a bit of dried oregano, if desired. Serve with sliced or grated yellow cheddar cheese on top and hot homemade flour tortillas on the side. Yum!

Best breakfast food every invented---huevos rancheros. WHEY-vos ranch-AIR-os. Literally, ranch eggs. Fried eggs on a corn tortilla smothered with chile (red or green or both) topped with cheese (melted) and served with pinto beans (no, not black beans) and hash browned potatoes. I strongly recommend scrambled eggs and green chile.
